Ingredients

1.5 lbs chicken thighs (boneless, skinless)

1/4 cup honey

1/3 cup hot sauce (Frank’s RedHot or your favorite brand)

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Blue cheese or ranch dressing (for serving)

Instructions

Prepare Marinade: In a medium bowl, whisk together honey, hot sauce, olive oil, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

Marinate Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it’s well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, or ideally overnight for maximum flavor.

Preheat Grill: Preheat your grill to medium-high heat, about 375°F (190°C). If using a charcoal grill, prepare the coals until they are glowing and covered with ash.

Grill Chicken: Remove chicken thighs from the marinade and let the excess drip off. Discard the leftover marinade. Place the chicken thighs on the grill, cooking for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the thighs are nicely charred. Avoid direct flames to prevent burning.

Rest & Serve: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes. This allows the juices to redistribute, making the chicken tender and juicy.

Garnish: Sprinkle chopped fresh parsley on top for an added burst of color and flavor. Serve with blue cheese or ranch dressing on the side if desired.

Enjoy your delectable Grilled Honey Buffalo Chicken Thighs!
