Grilled Honey Garlic Chicken Skewers

1 lb (450g) boneless, skinless chicken breast, cut into 1-inch cubes

1/4 cup honey

1/4 cup soy sauce (low sodium preferred)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

1 bell pepper (any color), cut into 1-inch pieces

1 red onion, cut into 1-inch pieces

Fresh cilantro or green onions (for garnish)

Skewers (wooden or metal)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together honey, soy sauce, minced garlic, grated ginger, sesame oil, rice vinegar, red pepper flakes, salt, and pepper.

    Marinate the Chicken: Add the cubed chicken to the marinade, ensuring all pieces are well-coated. Cover the bowl with plastic wrap or transfer everything to a ziplock bag. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

      Prep the Skewers: If you're using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. If using metal skewers, you’re good to go!

        Assemble the Skewers: Thread the marinated chicken, bell pepper pieces, and red onion pieces alternately onto the skewers. Aim for 4-5 pieces of chicken and a few vegetable pieces per skewer.

          Preheat the Grill: Heat your grill to medium-high heat. You can also use an indoor grill pan if needed.

            Grill the Skewers: Place the chicken skewers on the grill. Cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and internal temperature reaches 165°F (75°C).

              Baste and Finish: In the last few minutes of cooking, brush any remaining marinade onto the skewers for extra flavor and glaze. Be careful not to brush on too much, as the marinade contains raw chicken juices.

                Serving: Once cooked, remove the skewers from the grill. Let them rest for a couple of minutes. Garnish with freshly chopped cilantro or green onions before serving.
