Grilled Nectarine Burrata Prosciutto Salad

4 ripe nectarines, halved and pitted

8 oz burrata cheese

4 oz thinly sliced prosciutto

4 cups mixed baby greens (arugula, spinach, and kale)

1/4 cup toasted walnut halves

1/4 cup fresh basil leaves, torn

2 tbsp extra virgin olive oil

2 tbsp balsamic glaze

Salt and freshly cracked black pepper, to taste

Instructions
 

Preheat the Grill: Heat your grill to medium-high heat (about 400°F / 200°C).

    Grill the Nectarines: Brush the cut sides of the nectarines lightly with olive oil. Place the nectarines cut-side down on the grill and cook for about 4-5 minutes until grill marks appear and they soften slightly. Flip and grill the other side for an additional 2-3 minutes. Remove from the grill and set aside to cool slightly.

      Prepare the Salad Base: In a large bowl, combine the mixed baby greens, torn basil leaves, and toasted walnut halves. Drizzle with 1 tablespoon of olive oil and season with salt and pepper to taste. Toss gently to coat.

        Assemble the Salad: Divide the salad mixture among four plates. Cut each grilled nectarine half into slices and arrange on top of the greens. Tear the burrata into pieces and distribute it evenly across the salads.

          Add Prosciutto: Drape the prosciutto slices elegantly over the salad.

            Finish with Glaze: Drizzle the salads with the balsamic glaze and the remaining tablespoon of olive oil for an extra burst of flavor. Add a final sprinkle of salt and freshly cracked black pepper if desired.
