Grilled Peach & Burrata Salad

4 ripe peaches, halved and pitted

8 oz burrata cheese

6 cups mixed greens (arugula, spinach, and baby kale)

1/4 cup fresh basil leaves, torn

1/4 cup balsamic glaze

1/4 cup extra virgin olive oil

Salt and pepper to taste

1/4 cup toasted pine nuts (or walnuts, optional)

1 tablespoon honey (optional for sweetness)

Instructions
 

Preheat the Grill: Heat your grill or grill pan over medium-high heat.

    Prepare the Peaches: Brush the cut sides of the peach halves with olive oil and sprinkle lightly with salt.

      Grill the Peaches: Place the peaches cut-side down on the grill. Grill for about 4-5 minutes until they develop beautiful grill marks and are slightly softened. Remove from the grill and set aside to cool.

        Assemble the Salad Base: In a large bowl, combine the mixed greens, torn basil leaves, and a drizzle of olive oil. Toss gently to coat.

          Add the Burrata: Tear the burrata cheese into large pieces and scatter it over the salad base.

            Slice the Peaches: Once the grilled peaches are cool enough to handle, slice them into wedges and arrange them on top of the salad.

              Finish the Salad: Drizzle the salad with balsamic glaze and an extra splash of olive oil. If desired, add honey for added sweetness. Sprinkle with salt and pepper to taste.
