4 ripe peaches, halved and pitted

1 tablespoon olive oil

Salt and freshly cracked black pepper to taste

4 slices of crusty bread (like ciabatta or sourdough)

1 clove garlic, peeled

8 ounces burrata cheese

Fresh basil leaves for garnish

Balsamic glaze for drizzling

Optional: honey for drizzling

Prepare the Peaches: Preheat your grill or grill pan over medium heat. Brush the cut sides of the peaches with olive oil and sprinkle with a little salt and pepper.

    Grill the Peaches: Place the peaches cut-side down on the grill and cook for about 4-5 minutes, or until grill marks appear and the flesh softens slightly. Flip the peaches and cook for another 2-3 minutes. Remove from the grill and set aside to cool.

      Toast the Bread: While the peaches are grilling, brush each side of the bread slices lightly with olive oil. Grill the bread for about 2-3 minutes on each side until golden and crispy. Remove from the grill and let cool slightly.

        Garlic Rub: Once the bread has cooled slightly, rub the toasted side of each slice lightly with the garlic clove for a hint of flavor.

          Assemble the Toast: Start by placing the grilled peach halves on each slice of toast, cut side up. Tear the burrata cheese and distribute it generously on top of the peaches.

            Garnish and Serve: Top with fresh basil leaves, drizzle with balsamic glaze, and if desired, a little honey for extra sweetness.
