Grilled Peach Chicken Salad

2 boneless, skinless chicken breasts

2 ripe peaches, halved and pitted

6 cups mixed salad greens (such as arugula, spinach, and romaine)

1/2 cup crumbled feta cheese

1/4 cup sliced red onions

1/4 cup walnuts, toasted

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, pepper, and a tablespoon of olive oil. Let them marinate for about 15 minutes.

    Preheat the Grill: Preheat your grill or grill pan to medium-high heat. Make sure it’s well-oiled to prevent sticking.

      Grill the Chicken: Place the marinated chicken breasts on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let them rest for 5 minutes.
