Grilled Peach Chicken with Balsamic Drizzle

4 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup balsamic vinegar

2 tablespoons honey

Fresh basil leaves for garnish (optional)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the olive oil, salt, black pepper, garlic powder, and smoked paprika. Add the chicken breasts and ensure they are well coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for deeper flavor).

    Prepare the Balsamic Drizzle: In a small saucepan, combine the balsamic vinegar and honey. Bring to a simmer over medium heat, and reduce the heat to low. Let it simmer for about 15-20 minutes, stirring occasionally, until the mixture has thickened and reduced to a syrup-like consistency. Remove from heat and let cool.

      Preheat the Grill: While the balsamic drizzle is cooling, preheat your grill to medium-high heat. If using a charcoal grill, make sure the coals are ashed over.

        Grill the Chicken: Remove the chicken from the marinade and shake off any excess. Place the chicken breasts on the grill and cook for about 6-7 minutes on one side. Flip the chicken and cook for an additional 5-6 minutes or until the internal temperature reaches 165°F (75°C).

          Grill the Peaches: After flipping the chicken for the second time, add the peach slices to the grill. Grill for about 2-3 minutes on each side until they have nice grill marks and are tender.

            Serve: Once the chicken is cooked and the peaches are grilled, remove them from the heat. Plate the chicken breasts, top each with grilled peach slices, and drizzle generously with the balsamic reduction. Garnish with fresh basil if desired.
