Grilled Peaches with Honey and Yogurt

4 ripe peaches, halved and pitted

2 tablespoons olive oil

Pinch of sea salt

1 cup Greek yogurt (plain or vanilla)

4 tablespoons honey (plus extra for drizzling)

1 teaspoon vanilla extract (if using plain yogurt)

1/4 teaspoon cinnamon (optional)

Fresh mint leaves, for garnish

Crushed nuts (almonds or pistachios), for topping (optional)

Instructions
 

Preheat the Grill: Start by preheating your grill or grill pan on medium heat. If using a charcoal grill, ensure the coals are hot and ashy.

    Prepare the Peaches: In a mixing bowl, gently toss the peach halves with olive oil and a pinch of sea salt. This will enhance the sweetness and help in achieving a nice char.

      Grill the Peaches: Place the peach halves cut side down on the grill. Grill for about 4-5 minutes or until grill marks appear and the peaches are slightly softened. Flip and grill for another 2-3 minutes on the skin side.

        Prepare the Yogurt Mixture: While the peaches are grilling, in a separate bowl, mix the Greek yogurt with honey and vanilla extract (if using plain yogurt). Stir until well combined. If desired, sprinkle in cinnamon for added flavor.

          Serve: Once the peaches are done grilling, remove them from the grill and allow them to cool for a minute. Place two peach halves on each serving plate. Spoon a generous dollop of the yogurt mixture on top of the peaches.
