Ingredients

4 cups watermelon, cut into cubes (about 1-inch size)

1 cup feta cheese, diced or crumbled

1/4 cup fresh mint leaves, chopped

2 tablespoons balsamic glaze

2 tablespoons olive oil

Salt and pepper to taste

Skewers (wooden or metal, if using wooden, soak in water for 30 minutes to prevent burning)

Instructions

Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to avoid burning on the grill. You can use metal skewers directly.

Marinate the Watermelon: In a large bowl, toss the watermelon cubes with olive oil, a pinch of salt, and pepper. Let it marinate for about 10-15 minutes to absorb the flavors.

Assemble the Skewers: On each skewer, thread a piece of watermelon followed by a piece of feta cheese. Repeat until the skewer is filled (typically 2-3 pieces of each per skewer).

Preheat the Grill: Heat your grill to medium-high heat. If you're using a grill pan, preheat it on the stove over medium heat.

Grill the Skewers: Place the assembled skewers onto the grill. Grill for about 2-3 minutes on each side or until the watermelon has grill marks and is slightly softened.

Garnish: Once skewers are grilled, remove them from the heat and place them on a serving platter. Drizzle balsamic glaze over the top and sprinkle with fresh mint leaves for added flavor.

Serve: Enjoy your Grilled Watermelon Feta Skewers warm as a refreshing appetizer or a light side dish.
