1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), chopped

2 cups red enchilada sauce

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

2 cups cooked rice (white or brown)

1 tsp chili powder

1 tsp cumin

½ tsp smoked paprika

Salt and pepper to taste

1 ½ cups shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for topping)

Sour cream (optional, for serving)

Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes, breaking it apart with a wooden spoon. Drain any excess fat if needed.

    Sauté the Vegetables: To the same skillet, add the diced onion, minced garlic, and chopped bell pepper. Cook for another 5 minutes, until the veggies are softened.

      Add Spices and Sauces: Stir in chili powder, cumin, smoked paprika, salt, and pepper. Mix well, then pour in the enchilada sauce, black beans, corn, and cooked rice. Stir to combine all ingredients.
