Ingredients

1 cup whole wheat flour

1/2 cup almond flour

1/2 cup rolled oats

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1/4 cup plain Greek yogurt

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh blueberries (or frozen, if necessary)

Optional: 1/2 teaspoon cinnamon for added flavor

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, almond flour, rolled oats, baking powder, baking soda, salt, and cinnamon (if using) until well combined.

Combine Wet Ingredients: In another bowl, mix the unsweetened applesauce, honey (or maple syrup), Greek yogurt, egg, and vanilla extract. Stir until the mixture is smooth.

Combine Mixtures: Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; it's alright if there are a few lumps.

Fold in Blueberries: Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.

Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cavity about 2/3 full.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Remove the muffins from the oven and let them cool in the pan for 5 minutes. Then, transfer them to a wire rack to cool completely. Enjoy your guilt-free blueberry muffins warm or at room temperature!
