1 lb chicken breast, cut into bite-sized pieces

1 cup almond flour

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

2 large eggs, beaten

1/4 cup coconut oil or avocado oil (for frying)

Optional: Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Begin by cutting the chicken breast into bite-sized pieces and placing them in a bowl. Season with salt, pepper, garlic powder, onion powder, and paprika. Toss to coat evenly.

    Set Up Breading Station: In a shallow dish, combine the almond flour and grated Parmesan cheese. In another bowl, beat the two eggs.

      Bread the Chicken: Dip each chicken piece first into the egg mixture, allowing the excess to drip off, then roll it in the almond flour and Parmesan mixture until fully coated. Place the breaded nuggets on a plate.

        Heat the Oil: In a large skillet, heat the coconut oil or avocado oil over medium heat. You want enough oil to cover the bottom of the pan for frying.
