1 pound frozen hash browns

4 cups vegetable or chicken broth

1 cup heavy cream

1 medium onion, diced

2 cloves garlic, minced

2 cups shredded sharp cheddar cheese

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

3 green onions, chopped (for garnish)

Optional: crispy bacon bits for garnish

Instructions
 

In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add the frozen hash browns to the pot and stir well to combine with the onions and garlic. Cook for about 5 minutes, stirring occasionally.

      Pour in the vegetable or chicken broth and bring the mixture to a gentle simmer. Cook for 10-15 minutes until the hash browns are tender.

        Reduce the heat to low. Stir in the heavy cream, shredded cheddar cheese, dried thyme, paprika, salt, and pepper. Continue to stir until the cheese has melted and the soup is creamy and smooth.
