8 large flour tortillas

6 large eggs

1 cup shredded cheddar cheese

1 cup diced hatch green chiles (fresh or canned)

1/2 cup cooked and crumbled breakfast sausage (optional)

1/4 cup finely chopped onions

1 avocado, sliced (for topping)

1/4 cup sour cream (for serving)

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent (about 3-4 minutes). Crack the eggs into a bowl, whisk with salt and pepper, and pour into the skillet with the onions. Cook softly, stirring frequently, until the eggs are just set but still fluffy.
