1 lb ground chicken

1 cup Hatch green chiles (fresh or canned, chopped)

1 cup shredded sharp cheddar cheese

1 cup tortilla chips (crushed)

1 teaspoon taco seasoning

1 tablespoon olive oil

½ cup diced tomatoes

½ cup sliced black olives

¼ cup diced red onion

¼ cup chopped fresh cilantro

1 avocado (sliced)

1 lime (juiced)

Salt and pepper to taste

8 small taco-sized flour tortillas

Prepare the Chicken Mixture: In a large skillet, heat the olive oil over medium heat. Add the ground chicken and cook until browned, about 5-7 minutes. Stir in the taco seasoning, and season with salt and pepper. Mix in the chopped Hatch green chiles and cook for an additional 2-3 minutes until heated through.

    Warm the Tortillas: While the chicken is cooking, warm the flour tortillas in a dry skillet or on a griddle over medium heat for about 30 seconds on each side until pliable.

      Assemble the Tacos: On each warm tortilla, layer a generous spoonful of the Hatch chili chicken mixture. Top with a handful of crushed tortilla chips, then sprinkle with shredded cheddar cheese.
