1 cup Hatch green chilies, roasted, peeled, and chopped

1 box (8.5 oz) cornbread mix

1 cup buttermilk

2 large eggs

1 cup shredded sharp cheddar cheese

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cumin

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)

Preheat Oven: Preheat your oven to 400°F (200°C). Grease a 9x13 inch baking dish or spray it with non-stick spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the cornbread mix, baking powder, garlic powder, onion powder, cumin, salt, and pepper. Mix well to evenly distribute the dry spices.

      Whisk Wet Ingredients: In another bowl, whisk together the buttermilk and eggs until well blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredient mixture and stir until just combined. Do not overmix; a few lumps are okay.

          Add Extras: Gently fold in the chopped Hatch green chilies, shredded cheddar cheese, and corn kernels until evenly mixed.

            Pour into Baking Dish: Transfer the batter into the prepared baking dish, spreading it out evenly with a spatula.

              Bake: Place it in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

                Cool and Serve: Remove from the oven and allow it to cool for about 10 minutes before slicing. Garnish with fresh cilantro if desired. Serve warm, with a dollop of sour cream on top if you like.
