1 lb ground beef or turkey

1 can (15 oz) Hatch green chilies, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1 cup shredded cheddar cheese

1 cup sour cream

1 package taco-sized flour tortillas (about 10)

Fresh cilantro, chopped (for garnish)

Sliced avocado (optional, for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat.

      Add Aromatics: Stir in the chopped onion and garlic. Cook until the onion becomes translucent, about 3-4 minutes.

        Spice It Up: Add the diced Hatch green chilies, cumin, chili powder, paprika, salt, and black pepper to the skillet. Mix well and cook for another 2-3 minutes until everything is combined and warmed through.

          Prepare Tortilla Cups: Lightly grease a muffin tin. To shape the tortilla cups, use a cookie cutter to cut smaller rounds from the flour tortillas (if desired). Press each round into the muffin tin, creating a cup shape. You can use a glass or your fingers to help mold the tortillas into the muffin cups.
