Hawaiian Luau Rice

Ingredients
  

2 cups jasmine rice

4 cups coconut milk

1 cup pineapple chunks (fresh or canned)

1/2 cup diced bell pepper (red & yellow for color)

1/2 cup green onions, chopped

1/4 cup shredded carrots

1/4 cup raisins or dried cranberries

1 tsp soy sauce

1 tsp garlic powder

1/2 tsp ginger powder

Salt and pepper to taste

Optional: 1/2 cup macadamia nuts, chopped, for topping

Instructions
 

Rinse the Rice: Begin by rinsing the jasmine rice under cold water until the water runs clear, this removes excess starch and prevents sticking.

    Cook the Rice: In a large saucepan, combine the rinsed rice and coconut milk. Add a pinch of salt and bring it to a gentle boil over medium-high heat. Once it reaches a boil, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed.

      Prepare the Veggies: While the rice cooks, heat a small pan over medium heat. Add the diced bell peppers and shredded carrots; sauté them for about 3-5 minutes until they become slightly tender.

        Mix in Pineapple & Spices: In a large bowl, combine the cooked rice, sautéed vegetables, pineapple chunks, green onions, raisins, soy sauce, garlic powder, ginger powder, salt, and pepper. Gently fluff and stir until all ingredients are well mixed.

          Final Touch: If desired, bake the Hawaiian Luau Rice in a preheated oven at 350°F (175°C) for 10-15 minutes to warm everything through and blend the flavors. Alternatively, serve it warm right after mixing.

            Serve: Before serving, sprinkle chopped macadamia nuts on top for an added crunch and flavor contrast. Enjoy this tropical delight warm!
