2 cups cooked chicken, shredded or diced (skinless)

4 cups fresh broccoli florets (or frozen, thawed)

1 cup brown rice (uncooked)

2 cups low-sodium chicken broth

1 cup Greek yogurt (plain, non-fat or low-fat)

1 cup shredded reduced-fat cheddar cheese

1/2 cup almond milk (unsweetened)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 tablespoon olive oil

Salt and pepper to taste

1/4 cup whole wheat breadcrumbs (optional, for topping)

1 tablespoon chopped fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Rice: In a medium saucepan, combine the brown rice and chicken broth. Bring to a boil, then reduce to a simmer, cover, and cook for about 40-45 minutes or until rice is tender and all the liquid is absorbed.

      Prepare the Broccoli: While the rice is cooking, bring a small pot of salted water to a boil. Blanch the broccoli florets for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

        Mix the Sauce: In a large mixing bowl, whisk together the Greek yogurt, almond milk, garlic powder, onion powder, paprika, salt, and pepper until smooth.

          Combine Ingredients: In a large casserole dish, combine the cooked chicken, cooked brown rice, blanched broccoli, and the yogurt mixture. Stir well to ensure everything is evenly coated.

            Add Cheese: Fold in half of the shredded cheddar cheese into the casserole. Spread the remaining cheese evenly on top. If using, sprinkle the whole wheat breadcrumbs over the cheese for added crunch.

              Bake: Drizzle olive oil over the top and bake uncovered in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly, and the top is lightly golden.

                Garnish and Serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
