4 medium russet potatoes

1 cup fresh broccoli florets, steamed and chopped

1 cup shredded sharp cheddar cheese

1/4 cup Greek yogurt (or sour cream)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Fresh chives, chopped (for garnish)

Instructions
 

Prep the Potatoes:

    - Start by washing and drying your russet potatoes thoroughly. Poke a few holes in each potato with a fork to allow steam to escape while cooking.

      Air Fry the Potatoes:

        - Preheat your air fryer to 400°F (200°C).

          - Brush the potatoes with olive oil and season with salt and pepper.

            - Place them in the air fryer basket and cook for 35-40 minutes, turning halfway through, until they are tender and a fork easily pierces through.

              Prepare the Broccoli Cheddar Filling:

                - In a mixing bowl, combine the steamed and chopped broccoli, shredded sharp cheddar cheese, Greek yogurt, garlic powder, onion powder, and a pinch of salt and pepper. Mix well.

                  Stuff the Potatoes:

                    - Once the potatoes are cooked, remove them from the air fryer and let them cool for a few minutes.

                      - Slice each potato down the center, carefully opening them up without completely separating the halves.
