Ingredients

For the Turkey Meatballs:

1 lb ground turkey

1/2 cup breadcrumbs (whole wheat or almond flour for a gluten-free option)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped parsley or spinach

1 clove garlic, minced

1 small onion, finely diced

1 large egg

1/2 tsp dried oregano

1/2 tsp paprika

Salt and pepper to taste

For the Dipping Sauce:

1/2 cup Greek yogurt

2 tbsp Dijon mustard

1 tbsp honey

1 tbsp apple cider vinegar

1/2 tsp garlic powder

1/4 tsp paprika

Salt and pepper to taste

Instructions

Prepare the Meatball Mixture: In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, chopped parsley or spinach, minced garlic, diced onion, egg, oregano, paprika, salt, and pepper. Mix until all the ingredients are well incorporated.

Form the Meatballs: Using your hands, shape the mixture into small meatballs (about 1-1.5 inches in diameter) and place them on a baking sheet or plate.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

Air Fry the Meatballs: Lightly spray the air fryer basket with cooking spray. Arrange the meatballs in a single layer in the basket, ensuring they don’t touch each other. Air fry for 12-15 minutes, or until the meatballs are cooked through and reach an internal temperature of 165°F (75°C), shaking the basket halfway through for even cooking.

Make the Dipping Sauce: While the meatballs are cooking, prepare the dipping sauce. In a small bowl, whisk together the Greek yogurt, Dijon mustard, honey, apple cider vinegar, garlic powder, paprika, salt, and pepper. Adjust seasoning to taste.

Serve: Once the meatballs are done, remove them from the air fryer and let them cool for a couple of minutes. Serve with the dipping sauce on the side. Enjoy your delicious and healthy turkey meatballs!
