1 ½ cups whole wheat flour

½ cup rolled oats

1 teaspoon baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon

¼ teaspoon nutmeg (optional)

½ teaspoon salt

⅓ cup honey or maple syrup

2 large eggs

½ cup unsweetened applesauce

¼ cup unsweetened almond milk (or any milk of your choice)

1 teaspoon vanilla extract

1 ½ cups diced apples (about 2 medium apples)

¼ cup chopped walnuts or pecans (optional)

2 tablespoons chia seeds or flax seeds (optional, for added nutrition)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

    Combine Dry Ingredients: In a large bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, ground cinnamon, nutmeg (if using), and salt until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the honey or maple syrup, eggs, applesauce, almond milk, and vanilla extract until smooth.

        Combine the Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.

          Fold in Apples and Nuts: Gently fold in the diced apples, walnuts or pecans (if using), and chia or flax seeds (if using) until evenly distributed in the batter.

            Fill the Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
