Ingredients
  

1 lb boneless, skinless chicken breast, diced

2 tablespoons olive oil

1 cup bell peppers (red, yellow, green), diced

1 cup broccoli florets

1 medium zucchini, sliced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, for garnish

Lemon wedges, for serving

Instructions
 

Preheat the Skillet: In a large skillet, heat the olive oil over medium-high heat.

    Cook Chicken: Add the diced chicken breast to the skillet. Season with salt, pepper, oregano, and paprika. Cook for about 5-7 minutes, or until the chicken is golden brown and fully cooked. Remove chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the minced garlic and cook for 30 seconds until fragrant. Then, add the diced bell peppers and zucchini. Stir-fry for 3-4 minutes until the vegetables start to soften.

        Add Broccoli and Tomatoes: Toss in the broccoli florets and cherry tomatoes. Sauté for an additional 5 minutes, until the broccoli is bright green and just tender.

          Combine Everything: Return the cooked chicken to the skillet with the vegetables and toss everything together. Cook for another 2-3 minutes to heat through.

            Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve with lemon wedges on the side for an extra zing!
