4 cups green cabbage, shredded

1 red bell pepper, sliced into strips

2 carrots, julienned

3 cloves garlic, minced

1-inch piece of ginger, grated

2 tablespoons low-sodium soy sauce

2 tablespoons sesame oil

1 tablespoon rice vinegar

1 tablespoon honey or agave syrup

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Prepare the Chicken: Season the sliced chicken breast with salt and pepper. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Sauté the Veggies: In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and grated ginger, cooking for about 30 seconds until fragrant. Then, toss in the shredded cabbage, red bell pepper, and julienned carrots. Stir-fry for 3-5 minutes until the vegetables are tender but still crisp.

      Combine Everything: Return the cooked chicken to the skillet with the vegetables. In a small bowl, whisk together the soy sauce, rice vinegar, and honey (or agave syrup). Pour the sauce over the stir-fry, tossing everything to coat well.
