Healthy Chicken Quesadillas with Fresh Veggies

Ingredients
  

2 cups cooked chicken breast, shredded

1 cup bell peppers (red and green), diced

1 cup fresh spinach, chopped

1/2 cup red onion, thinly sliced

1 cup shredded low-fat mozzarella cheese

4 whole wheat tortillas

1 tablespoon olive oil

1 teaspoon cumin powder

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, for garnish

Salsa or Greek yogurt, for serving

Instructions
 

Prepare the Filling:

    - In a large skillet, heat the olive oil over medium heat. Add the diced bell peppers and red onion, sautéing for about 3-5 minutes or until they become tender.

      - Stir in the chopped spinach, shredded chicken, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until the spinach has wilted and everything is heated through. Remove from heat.

        Assemble the Quesadillas:

          - Lay out two tortillas on a flat surface. Evenly distribute half of the chicken and veggie mixture on each tortilla. Sprinkle half of the mozzarella cheese on top of the filling for each tortilla.

            - Place the remaining tortillas on top, pressing down gently to secure the filling.

              Cook the Quesadillas:

                - Wipe the skillet clean, then return it to medium heat. If desired, add a little more olive oil to the pan. Carefully place one quesadilla in the skillet and cook for about 3-4 minutes on one side until golden brown. Flip and cook the other side for an additional 3-4 minutes until the cheese is melted and the tortilla is crispy.

                  - Repeat with the second quesadilla.

                    Serve:

                      - Remove the quesadillas from the skillet and let them rest for a minute before slicing them into wedges. Garnish with freshly chopped cilantro and serve with salsa or Greek yogurt on the side.
