Healthy Chili Egg Bakes

6 large eggs

1 cup red bell pepper, diced

1 cup green bell pepper, diced

½ cup onion, finely chopped

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies

1 cup corn (fresh or frozen)

1 cup shredded low-fat cheddar cheese

1 tsp chili powder

1 tsp cumin

½ tsp smoked paprika

Salt and pepper to taste

Fresh cilantro or green onions for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

    Sauté Vegetables: In a medium skillet over medium heat, sauté the diced red and green bell peppers and onions until softened, about 5-7 minutes. Remove from heat.

      Prepare Egg Mixture: In a large mixing bowl, crack the 6 eggs and whisk them until well combined. Add in the black beans, diced tomatoes (with their juice), corn, sautéed vegetables, chili powder, cumin, smoked paprika, salt, and pepper. Mix until everything is evenly incorporated.

        Add Cheese: Fold in ¾ cup of the shredded cheddar cheese into the egg mixture, reserving the remaining ¼ cup for topping.

          Pour into Baking Dish: Pour the egg mixture into the prepared baking dish, spreading it evenly.

            Top with Cheese: Sprinkle the remaining ¼ cup of cheese evenly over the top of the mixture.

              Bake: Place the baking dish in the oven and bake for 25-30 minutes, or until the eggs are set and a toothpick inserted in the center comes out clean.

                Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro or sliced green onions before serving.
