Ingredients

2 cups rolled oats

1/2 cup almond flour

1/3 cup honey or maple syrup

1/3 cup unsweetened applesauce

1/2 cup almond butter or peanut butter

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (dairy-free if preferred)

1/4 cup chopped nuts (optional, such as walnuts or almonds)

1/4 cup dried fruit (optional, such as cranberries or raisins)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, cinnamon, and salt. Stir until well mixed.

Combine Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), applesauce, and vanilla extract until smooth and creamy.

Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is evenly combined. The mixture will be thick.

Add Chocolate and Extras: Gently fold in the dark chocolate chips, chopped nuts, and dried fruit if using. Ensure they are evenly distributed throughout the mixture.

Spread and Bake: Transfer the mixture to the prepared baking pan, spreading it out evenly. Press it down firmly with the back of a spatula or your hands.

Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges start to turn golden brown. A toothpick inserted in the center should come out mostly clean.

Cool and Cut: Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Once cooled, cut into squares or bars.

Storage: Store in an airtight container at room temperature for up to one week, or in the fridge for longer freshness.

Prep Time: 10 minutes | Total Time: 35 minutes | Servings: 16 bars
