2 cups rolled oats

1 cup mashed ripe bananas (about 2-3 bananas)

1/2 cup natural almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (preferably 70% cocoa or higher)

1/4 cup chopped nuts (optional, such as walnuts or pecans)

1/4 cup dried fruit (optional, such as cranberries or raisins)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper for easy removal.

    Mix the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Stir well until smooth and homogenous.

      Add Dry Ingredients: Add the rolled oats, cinnamon, and salt to the wet mixture. Stir until everything is well mixed. If you’re adding nuts or dried fruits, fold them in at this stage.

        Fold in Chocolate Chips: Incorporate the dark chocolate chips gently into the mixture until evenly distributed.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish and spread it out evenly with a spatula, pressing down gently to compact the mixture.

            Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is slightly golden and a toothpick comes out clean from the center.

              Cool Down: Once baked, take the dish out of the oven and let it cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely.

                Cut and Serve: Once cooled, lift the bars out of the pan using the parchment paper and cut them into squares or rectangles. Enjoy them fresh or store them in an airtight container for up to a week.
