1 cup Medjool dates, pitted

1 cup rolled oats

1/2 cup almond butter (or any nut/seed butter)

1/4 cup unsweetened cocoa powder

1/4 cup shredded coconut (unsweetened, optional)

1/4 cup chopped nuts (almonds, walnuts, or hazelnuts)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

A pinch of cinnamon (optional)

Extra coconut or cocoa powder for rolling (optional)

Instructions
 

Prepare the Dates: Begin by making sure your Medjool dates are soft and pitted. If they are a bit dry, soak them in warm water for about 10 minutes, then drain well.

    Blend Ingredients: In a food processor, combine the pitted dates, rolled oats, almond butter, cocoa powder, shredded coconut, chopped nuts, vanilla extract, sea salt, and cinnamon (if using). Pulse until a sticky, dough-like consistency is achieved. If the mixture is too dry, add a teaspoon of water or extra almond butter as needed.

      Shape the Balls: Using your hands, take about a tablespoon of the mixture and roll it into a ball shape. Repeat this step until all the mixture is formed into balls.

        Coat the Balls: If desired, roll some (or all) of the chocolate date balls in extra shredded coconut or cocoa powder for added texture and flavor.

          Chill and Serve: Place the finished balls on a plate or in an airtight container and refrigerate for at least 30 minutes to firm up. Enjoy them chilled as a healthy snack or dessert!
