1 medium zucchini (about 1 cup grated)

1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

2 large eggs

1/3 cup maple syrup or honey

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1/2 cup Greek yogurt (plain, optional)

1/2 cup dark chocolate chips (dairy-free if needed)

1/2 teaspoon cinnamon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease it.

    Prepare the Zucchini: Using a box grater or food processor, grate the zucchini. Squeeze out excess moisture by placing it in a clean kitchen towel and wringing it out. Set aside.

      Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, cocoa powder, baking soda, baking powder, salt, and optional cinnamon.

        Combine Wet Ingredients: In another bowl, whisk together the eggs, maple syrup (or honey), applesauce, vanilla extract, and Greek yogurt (if using) until smooth.

          Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold until just combined. Be careful not to overmix.
