1 lb ground turkey

1 cup brown rice

2 cups low-sodium chicken broth (or water)

1 tablespoon olive oil

1 tablespoon fresh ginger, minced

2 cloves garlic, minced

1/4 cup low-sodium soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 cup broccoli florets

1 bell pepper, diced (any color)

1 carrot, julienned

2 green onions, sliced

Sesame seeds, for garnish

Cook the Rice: In a medium saucepan, combine the brown rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 45 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

    Prepare the Sauce: In a small bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, and sesame oil. Set aside.

      Cook the Turkey: In a large skillet or wok, heat the olive oil over medium heat. Add the minced ginger and garlic, sautéing until fragrant (about 1-2 minutes).
