4 salmon fillets (6 oz each)

2 cups fresh spinach, washed and dried

2 tablespoons olive oil

2 tablespoons unsalted butter

2 cloves garlic, minced

1 lemon (zested and juiced)

1 teaspoon fresh dill (or ½ teaspoon dried dill)

Salt and pepper to taste

A pinch of red pepper flakes (optional)

Lemon wedges (for serving)

Prepare the Ingredients: Pat the salmon fillets dry with paper towels and season both sides with salt, pepper, and lemon zest. Mince the garlic and set aside.

    Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once the oil shimmers, add the salmon fillets skin-side down and sear for about 4-5 minutes until the skin is crispy and golden.

      Flip the Salmon: Carefully flip the salmon fillets and add 1 tablespoon of butter to the pan. Squeeze half of the lemon juice over the fillets. Cook for another 4-5 minutes or until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the skillet and let it rest on a plate.

        Sauté the Spinach: In the same skillet, lower the heat to medium and add remaining tablespoon of olive oil. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

          Add Spinach: Toss in the spinach and a pinch of red pepper flakes if using. Cook for 2-3 minutes until the spinach wilts down. Squeeze in the remaining lemon juice and sprinkle with dill, then mix well. Season with salt and pepper to taste.

            Serve: Plate the sautéed spinach alongside the salmon fillets, and garnish with lemon wedges for an extra zesty kick.
