Healthy Pineapple Teriyaki Chicken

1 lb (450g) boneless, skinless chicken thighs or breast

1 cup fresh pineapple chunks (can use canned)

1/4 cup low-sodium soy sauce

1 tbsp honey or maple syrup

1 tbsp rice vinegar

2 cloves garlic, minced

1 tsp grated fresh ginger

1 tsp sesame oil

1 tbsp cornstarch mixed with 2 tbsp cold water (for thickening)

1 tbsp sesame seeds (for garnish)

3 green onions, sliced (for garnish)

Cooked brown rice or quinoa (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the soy sauce, honey, rice vinegar, minced garlic, grated ginger, and sesame oil. Add the chicken pieces and toss to coat. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Cook the Chicken: In a large skillet or wok, heat a little oil over medium-high heat. Once hot, add the marinated chicken (reserve the marinade) and cook until the chicken is browned and cooked through, about 5-7 minutes.

      Prepare the Teriyaki Sauce: While the chicken is cooking, in a small saucepan, combine the reserved marinade and pineapple chunks. Bring to a simmer over medium heat.

        Thicken the Sauce: Once it begins to simmer, add the cornstarch mixture and stir continuously until the sauce thickens, about 2-3 minutes. Remove from heat.

          Combine: Pour the thickened teriyaki sauce over the cooked chicken in the skillet. Mix well to ensure the chicken is coated in the sauce.

            Serve: Serve the pineapple teriyaki chicken over cooked brown rice or quinoa. Garnish with sesame seeds and sliced green onions.
