Ingredients

1 cup mashed ripe bananas (about 2 medium bananas)

1 cup pumpkin puree (canned or fresh)

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans) or chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, honey (or maple syrup), applesauce, melted coconut oil, and vanilla extract. Mix until smooth and well combined.

Combine Dry Ingredients: In another bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

Integrate Ingredients: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps. If you’re adding nuts or chocolate chips, fold them in at this stage.

Pour into Pan: Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Bake: Bake in the oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. The top should be set and slightly golden.

Cool and Slice: Allow the bars to cool in the pan for about 15 minutes, then transfer them to a wire rack to cool completely. Once cooled, cut into squares or bars.

Serve and Enjoy: These delicious pumpkin banana bars can be enjoyed as a snack, breakfast, or dessert! Store them in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
