Prepare the Oats: Begin by grinding the rolled oats into a fine flour using a blender or food processor. This should yield about 1 cup of oat flour.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, almond milk, eggs, maple syrup, and vanilla extract. Whisk until the mixture is smooth and well blended.

      Combine Dry Ingredients: In a separate bowl, mix the oat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Stir until evenly combined.

        Incorporate Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to over-mix; a few lumps are okay. Let the batter rest for about 5 minutes to thicken slightly.

          Preheat the Waffle Iron: While the batter rests, preheat your waffle iron according to the manufacturer's instructions. If needed, lightly grease it with cooking spray or a brush of oil.

            Cook the Waffles: Pour about 1/2 to 3/4 cup of batter onto the center of the preheated waffle iron (the exact amount will depend on the size of your waffle iron). Close the lid and cook until the waffles are golden brown and crispy, usually around 5-7 minutes.
