Healthy Quinoa Salad with Lemon Dressing

1 cup quinoa (rinsed and drained)

2 cups vegetable broth or water

1 cup cherry tomatoes (halved)

1 medium cucumber (diced)

1 bell pepper (diced, any color)

1 cup canned chickpeas (drained and rinsed)

1/4 cup red onion (finely chopped)

1/4 cup fresh parsley (chopped)

1/4 cup feta cheese (crumbled, optional)

Salt and pepper to taste

For the Lemon Dressing:

Juice of 2 lemons

Zest of 1 lemon

1/4 cup extra-virgin olive oil

1 teaspoon honey or maple syrup (optional)

1 garlic clove (minced)

Salt and pepper to taste

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit for 5 minutes. Fluff with a fork and allow to cool.

    Prepare the Vegetables: While the quinoa is cooling, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large mixing bowl.

      Mix the Dressing: In a small bowl, whisk together the lemon juice, lemon zest, olive oil, honey/maple syrup (if using), minced garlic, salt, and pepper until well combined.

        Combine Ingredients: In the large bowl with the chopped vegetables, add the cooled quinoa and chickpeas. Pour the lemon dressing over the mixture. Toss gently to combine, ensuring that the dressing coats all the ingredients.

          Add Fresh Herbs: Gently fold in the chopped parsley and sprinkle with feta cheese, if using. Taste and adjust seasoning with salt and pepper as necessary.

            Serve: Let the salad sit for 10-15 minutes to allow the flavors to meld. You can serve it immediately or refrigerate for up to 2 days.
