1 lb large shrimp, peeled and deveined

2 cups broccoli florets

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium zucchini, sliced

1 red onion, sliced into wedges

4 cloves garlic, minced

Juice of 1 lemon

Zest of 1 lemon

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Shrimp and Vegetables: In a large mixing bowl, combine the shrimp, broccoli, bell peppers, zucchini, and red onion.

      Make the Marinade: In a separate small bowl, whisk together the minced garlic, olive oil, lemon juice, lemon zest, smoked paprika, oregano, thyme, salt, and pepper.
