Ingredients

For the Base:

1 cup Medjool dates, pitted

1 cup raw almonds

1/2 cup unsweetened cocoa powder

1/4 cup coconut oil, melted

1 tsp vanilla extract

1/4 tsp sea salt

For the Caramel Layer:

1 cup Medjool dates, pitted

1/4 cup almond butter

1 tbsp maple syrup (optional for added sweetness)

1/4 tsp sea salt

For the Topping:

1/2 cup dark chocolate chips (dairy-free if desired)

1 tbsp coconut oil

1/4 cup crushed peanuts

Instructions

Prepare the Base:

    - In a food processor, combine the pitted Medjool dates, raw almonds, cocoa powder, melted coconut oil, vanilla extract, and sea salt.

      - Process until the mixture is well combined and forms a sticky dough. You may need to scrape down the sides to ensure everything is mixed thoroughly.

        - Line an 8x8 inch square baking dish with parchment paper, leaving an overhang for easy removal.

          - Press the base mixture evenly into the prepared dish, using your fingers or a spatula to flatten it firmly. Set aside.

            Make the Caramel Layer:

              - Rinse the food processor if necessary, and add 1 cup of Medjool dates, almond butter, maple syrup (if using), and sea salt.

                - Blend until smooth and creamy, scraping down the sides as needed.

                  - Spread the caramel layer evenly over the base layer in the dish. Use a spatula to ensure an even layer.

                    Prepare the Chocolate Topping:

                      - In a microwave-safe bowl or double boiler, combine the dark chocolate chips and coconut oil. Heat until melted and smooth, stirring often to prevent burning.

                        - Once melted, pour the chocolate mixture over the caramel layer, spreading evenly to cover the entire surface.

                          - Sprinkle the crushed peanuts over the top for added crunch and flavor.

                            Chill and Set:

                              - Place the baking dish in the refrigerator for at least 2 hours or until the bars are firm.

                                - Once set, remove the bars from the dish using the parchment overhang. Cut into squares or rectangles, depending on your preference.

                                  Serve and Enjoy:

                                    - Store any leftover bars in an airtight container in the refrigerator for up to a week. These bars make a perfect healthy snack or dessert!
