4 large bell peppers (any color)

1 lb (450g) ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or brown rice for a heartier option)

1 can (15 oz) black beans, drained and rinsed

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

1 cup shredded mozzarella cheese (or vegan cheese)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare Peppers: Wash the bell peppers, slice the tops off, and remove the seeds. Set them aside.

      Cook Filling: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened (about 3-4 minutes). Then, add the ground turkey, cooking until browned and fully cooked (around 5-7 minutes).

        Combine Ingredients: Stir in the chopped spinach, cooked quinoa, black beans, diced tomatoes, cumin, smoked paprika, salt, and pepper. Cook for another 2-3 minutes until the spinach wilts and everything is well combined.

          Stuff the Peppers: Spoon the turkey and spinach mixture generously into each bell pepper. Place the stuffed peppers upright in a baking dish.
