3 cups water (for cooking lentils)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup diced mushrooms

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon black pepper

1 cup barbecue sauce (store-bought or homemade)

1 tablespoon Worcestershire sauce (vegan if desired)

Salt to taste

4 hamburger buns (whole grain or regular)

Fresh parsley or cilantro, for garnish (optional)

Cook the Lentils: Rinse the lentils under cold water. In a medium pot, combine the lentils with water and a pinch of salt. Bring to a boil, then reduce heat to low and simmer uncovered for 20-25 minutes until tender. Drain any excess water and set aside.
