Hearty Cowboy Beef & Bean Bake

Ingredients
  

1 lb ground beef (preferably lean)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 small onion, finely chopped

2 cloves garlic, minced

1 cup corn kernels (fresh or frozen)

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 tablespoon Worcestershire sauce

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup crushed tortilla chips

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned and crumbled, approximately 5-7 minutes. Drain any excess fat.

      Sauté Aromatics: Add the chopped onion and minced garlic to the skillet with the beef. Sauté until the onions are translucent, about 3-4 minutes.

        Mix the Ingredients: Stir in the kidney beans, black beans, diced tomatoes with green chilies, corn, chili powder, cumin, smoked paprika, Worcestershire sauce, salt, and pepper into the skillet. Stir well to combine all the ingredients, and let it simmer for about 5 minutes.

          Transfer to Baking Dish: Pour the beef and bean mixture into a greased 9x13 inch baking dish, spreading it evenly.

            Add Toppings: Sprinkle the crushed tortilla chips over the top, followed by the shredded cheddar cheese.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
