Hearty Lentil and Potato Soup

Ingredients
  

1 cup green or brown lentils, rinsed

2 medium potatoes, diced (preferably Yukon Gold)

1 large onion, chopped

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

6 cups vegetable broth or water

1 can (14 oz) diced tomatoes, with juices

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish (optional)

Lemon wedges, for serving (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, diced carrots, and celery. Cook for an additional 3-4 minutes until the vegetables begin to soften.

      Add the diced potatoes to the pot, along with the rinsed lentils, vegetable broth (or water), diced tomatoes, cumin, smoked paprika, and bay leaf. Stir well to combine.

        Increase heat to bring the soup to a boil. Once boiling, reduce the heat to low and cover, letting it simmer for about 30-35 minutes or until the lentils and potatoes are tender.

          Season with salt and pepper to taste. Remove the bay leaf before serving.

            Optionally, garnish with fresh cilantro or parsley, and serve with lemon wedges for a zesty kick.
