Ingredients

1 lb ground beef

3 medium potatoes, diced

1 cup carrots, diced

1 medium onion, chopped

2 cloves garlic, minced

1 cup green beans (fresh or frozen)

1 can (15 oz) diced tomatoes (with juice)

1 tsp Worcestershire sauce

1 tsp Italian seasoning

Salt and pepper, to taste

1 cup shredded cheddar cheese

2 tbsp olive oil

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Ground Beef: In a large skillet over medium-high heat, heat the olive oil. Add the ground beef and cook until browned, about 5-7 minutes. Make sure to crumble the beef as it cooks. Drain excess fat if necessary.

Sauté Vegetables: Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.

Combine Ingredients: In a large mixing bowl, combine the browned beef mixture with diced potatoes, carrots, green beans, diced tomatoes (with their juice), Worcestershire sauce, Italian seasoning, salt, and pepper. Mix well to ensure everything is evenly coated.

Prepare Casserole Dish: Lightly grease a 9x13-inch casserole dish. Pour the hobo casserole mixture into the dish, spreading it evenly.

Wrap with Foil: Cover the casserole dish tightly with aluminum foil. This will steam the ingredients and cook them through.

Bake: Place the covered casserole in the preheated oven and bake for about 45 minutes.

Add Cheese: After 45 minutes, carefully remove the foil and sprinkle the shredded cheddar cheese on top. Return the casserole to the oven (uncovered) and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve: Once done baking, remove the casserole from the oven and let it cool for about 5 minutes before serving. Enjoy your hearty Hobo Casserole hot!
