1 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 cup unsalted butter, melted and cooled

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 1/2 cups fresh blueberries (or frozen, if unavailable)

Zest of 1 lemon (optional)

Extra sugar for topping (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with butter or non-stick spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. If using lemon zest, add it along with the dry ingredients.

      Combine Wet Ingredients: In another bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; some lumps are okay.

          Add Blueberries: Fold in the blueberries gently to prevent them from breaking. If you are using frozen blueberries, there's no need to thaw them; just toss them in with a little flour to help prevent sinking.

            Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full. If desired, sprinkle a little extra sugar on top of each muffin for a sweet, crunchy topping.
