Buttermilk is a fermented dairy product that has been used in cooking and baking for centuries. Traditionally, it was the liquid left over after churning butter, but today, it is often produced by adding a bacterial culture to regular milk. This process not only gives buttermilk its distinct tangy flavor but also alters its composition, making it an extraordinary ingredient in pancake recipes.

Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 cup buttermilk (or homemade: milk + vinegar/lemon juice)

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Optional toppings: maple syrup, fresh berries, whipped cream

Instructions

Prepare the Buttermilk: If you don't have buttermilk, make some by adding 1 tablespoon of white vinegar or lemon juice to 1 cup of milk. Let it sit for 5-10 minutes until it thickens slightly.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract. Whisk until everything is blended smoothly.

Combine Wet and Dry Mix: Pour the wet ingredients into the dry ingredients bowl. Using a spatula, gently fold the mixture together. Be careful not to overmix; it's okay if there are a few lumps. This will help keep the pancakes fluffy!

Heat the Griddle: Preheat a non-stick skillet or griddle over medium heat. You can test if it’s ready by splashing a few drops of water on the surface; they should sizzle and evaporate quickly.

Cook the Pancakes: Lightly grease the skillet with a little butter or non-stick spray (optional). Pour ¼ cup of batter onto the hot skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.

Maintain Warmth: Transfer the cooked pancakes to a plate and keep them warm in a low oven (around 200°F or 95°C) while you cook the remaining batter.

Serve: Stack your pancakes high and serve warm with your favorite toppings like maple syrup, fresh berries, or whipped cream. Enjoy your light and fluffy buttermilk pancakes!
