Ingredients

1 box (8.5 oz) cornbread mix

1 cup buttermilk

1/2 cup unsalted butter, melted

1/4 cup honey

2 large eggs

1 cup canned corn (drained)

1 cup shredded cheddar cheese (optional for a savory twist)

1/2 cup sour cream

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh chives, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with a little butter or cooking spray.

Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter, honey, buttermilk, and eggs until fully combined and smooth.

Combine Dry Ingredients: In another bowl, combine the cornbread mix, baking powder, salt, and black pepper. Make sure there are no lumps.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until combined. You’ll want to avoid over-mixing; it’s okay if there are a few small lumps.

Add Corn and Cheese: Carefully fold in the drained corn and shredded cheddar cheese (if using) until evenly distributed throughout the batter.

Pour Into Baking Dish: Pour the batter into the prepared baking dish, spreading it out evenly.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the casserole to cool for about 10 minutes before cutting into squares. Drizzle with a little extra honey and garnish with fresh chives if desired.

Enjoy: Serve warm as a delightful side dish or a sweet brunch treat!
