Honey Butter Fried Chicken Sliders

For the Honey Butter:

1/2 cup unsalted butter, softened

1/4 cup honey

1/4 teaspoon sea salt

For the Fried Chicken:

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup all-purpose flour

1/2 cup cornstarch

Oil for frying (vegetable or canola)

For the Sliders:

12 slider buns (preferably sweet brioche)

Pickles, for garnish

Optional: lettuce and tomato slices for serving

Instructions
 

Prepare the Honey Butter:

    In a mixing bowl, combine the softened butter, honey, and sea salt. Whip together until fully incorporated and smooth. Set aside at room temperature.

      Marinate the Chicken:

        In a larger bowl, mix the buttermilk, garlic powder, onion powder, paprika, and a pinch of salt and pepper. Add the chicken thighs, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 1 hour (up to 4 hours for more flavor).

          Prepare the Breading:

            In a separate bowl, combine the flour and cornstarch. Add a pinch of salt and pepper, mixing well. This will create a light and crispy coating.

              Heat the Oil:

                In a deep skillet or fryer, heat about 2 inches of oil to 350°F (175°C) over medium-high heat. You can test the oil by dropping a small amount of the coating mixture into it; it should sizzle immediately.

                  Fry the Chicken:

                    Take each marinated chicken thigh, allowing excess buttermilk to drip off, and dredge it in the flour mixture, pressing slightly to ensure a solid coating. Carefully place the coated chicken in the hot oil, being cautious to avoid splashing. Fry for about 5-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Work in batches if necessary, allowing the oil to return to temperature between batches.

                      Drain and Rest:

                        Use a slotted spoon or tongs to transfer the fried chicken to a paper towel-lined plate to drain excess oil.

                          Assemble the Sliders:

                            Slice the slider buns in half. Spread a generous amount of honey butter on the bottom half of each bun. Place a piece of fried chicken on top, add pickles and optionally lettuce and tomato if desired. Top with the other half of the bun.

                              Serve:
