Honey Garlic Grilled Chicken Skewers

1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

2 tablespoons fresh ginger, grated

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 teaspoon sesame oil

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

Fresh cilantro or green onions for garnish

Wooden or metal skewers

Instructions
 

Prepare the Marinade: In a medium mixing bowl, combine honey, soy sauce, minced garlic, grated ginger, olive oil, apple cider vinegar, sesame oil, black pepper, and red pepper flakes (if using). Whisk until the mixture is smooth and well combined.

    Marinate the Chicken: Place the chicken pieces in a large resealable plastic bag or shallow baking dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 4 hours for more flavor.

      Soak Skewers (if wooden): If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent them from burning.

        Preheat the Grill: Heat your grill to medium-high heat (about 400°F or 200°C).

          Assemble the Skewers: Once marinated, remove the chicken from the fridge. Thread the chicken pieces onto the skewers, leaving a little space between each piece to ensure even cooking.

            Grill the Skewers: Lightly oil the grill grates to prevent sticking. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks. The internal temperature should reach 165°F (75°C).

              Baste and Glaze (Optional): For an extra layer of flavor, you can reserve some of the marinade (make sure it's cooked! Bring it to a boil) and baste the chicken skewers during the last few minutes of grilling.

                Serve: Once done, remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh cilantro or sliced green onions before serving.
