1 teaspoon fresh ginger, grated

1 teaspoon salt

Preheat the oven to 425°F (220°C). This high heat will help crispen the skin and caramelize the honey-garlic glaze beautifully.

    Prepare the marinade: In a large mixing bowl, whisk together the honey, minced garlic, soy sauce, rice vinegar, olive oil, grated ginger, salt, black pepper, and sesame oil if using. This mixture should be well-combined and fragrant.

      Marinate the chicken: Place the chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is coated well. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes (up to overnight for maximum flavor).

        Arrange the chicken: Remove the marinated thighs from the fridge and let them sit at room temperature for about 15 minutes before cooking. This helps to ensure even cooking. Place the thighs skin-side up on a baking sheet lined with parchment paper or in a roasting pan.
