1 lb large shrimp, peeled and deveined

1/4 cup honey

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon olive oil

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

For the Summer Slaw:

2 cups green cabbage, shredded

1 cup red cabbage, shredded

1 cup carrots, grated

1/2 cup cilantro, chopped

1/4 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper, to taste

For Assembly:

8 small corn or flour tortillas

Lime wedges, for serving

Avocado slices (optional)

Marinate the Shrimp: In a bowl, combine honey, minced garlic, soy sauce, lime juice, olive oil, ground cumin, chili powder, salt, and pepper. Add the shrimp and toss to coat. Allow marinating for at least 15 minutes (or up to 1 hour in the fridge for better flavor).

    Prepare the Summer Slaw: In a large bowl, mix shredded green and red cabbage with grated carrots and chopped cilantro. In a separate small bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss until well combined. Adjust seasoning to taste and set aside.

      Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp (discarding any leftover marinade) and cook for 2-3 minutes on each side or until the shrimp turn pink and are cooked through.
